Brie Kisses

Passionate kisses are wonderful but a girls gotta eat. Give me cheesy kisses! And a bottle of wine, a loaf of bread and thee. All the right ingredients for the start to a very Happy Valentine’s Evening! I love recipes that look like you went to a lot of trouble but are a snap to make. These kisses will get you kisses in return!

Nothing says “You mean the world to me” like something you create for another, with love, from your heart. If you want your special someone to melt, then light the candles, key up your favorite music and offer them a plate of melted cheesy kisses to get things going! All you need is love….and a snack!

 Brie Kisses Ingredients

Life’s simple pleasures can be the best. When it’s this easy to be elegant, life just got that much better. Besides, how can you go wrong with brie and puff pastry?

Brie balls for freezer

Cut the brie into 1/2-inch squares, balls or blobs. Any shape is fine, it’s the size that matters. Place on a dinner plate and put the cheese in the freezer while you thaw the puff pastry for 30 minutes at room temperature. Thawed puff pastry sheet should still be cold.

Cut pastry in 4

Unfold the thawed pastry, press together seams and roll lightly with a rolling pin to smooth it out. If pastry cracks when unfolding, sprinkle crack with a little water and press back together. Cut the sheet into fourths.

Cut each fourth in half

Now cut each fourth in half. Easy math!

Cut in half

Cut the halves in half to make 16 squares per sheet. If pastry becomes warm or sticky, place it back in the freezer for 5 minutes, then continue with the recipe. Remove the brie pieces from the freezer.

Dough into each cup

Lightly spray a mini muffin pan with nonstick spray. Fit a piece of dough into each cup, pushing into the cup but leaving the edges sticking up.

Brie over pepper jelly

Place 1/4 teaspoon pepper jelly in each cup, then top with a piece of cheese. The amount of pepper jelly really depends on how spicy your jelly is and how much heat you like. A little under current of heat is what you’re looking for. Next time I think I’ll try raspberry jam with a squirt of Sriracha or Sambal for heat. If you can’t find pepper jelly, this would be a great option.

Bake 'til golden

Bake at 400 degrees for 13 to 18 minutes, until golden and flaky. Serve warm.

Make Ahead Tip: Can be prepared ahead and refrigerated until ready to bake, or you can bake them and rewarm about 10 minutes in a 350-degree oven before serving.
