Grilled Prosciutto Wrapped Asparagus with Herb Goat Cheese

Sometimes an appetizer is so incredibly great you consider having everyone’s portion all to yourself for dinner! That’s this one! Words can’t fully convey what the palate experiences but here goes. When you take the first bite, you feel the snap of the asparagus,  a crunchy salty bite from the prosciutto and then the herbed goat cheese oozes out and your mouth is in heaven. It’s even better than that so you’ll just have to try it for yourself!  

Prosciutto Asparagus Wrappings

Mise en Place! 

Blanched Asparagus

Blanch the asparagus. It’s just a quick hot bath that keeps it bright green and crisp, tender. Not a long luxurious soak in the tub!

Ice Bath

Drain and quickly place in an ice bath. Burr….but the asparagus loves it! 

Towel Dry Asparagus

Towel dry the asparagus completely. Combine softened cream cheese and herb goat cheese until smooth. If goat cheese is too firm, place in microwave for 20-30 seconds until softened. 

Prep the asparagus

Cut prosciutto slices in half and spread with cheese mixture. 

Wrapped and Ready to Grill

Wrap a prosciutto piece around each asparagus spear. If spears are slender, use 2 spears, thicker use 1 spear. 

Grilled Asparagus with Goat Cheese and Prosciutto

Grill, covered, over medium heat for 6-8 minutes or until prosciutto is crisp, turning once. Love those grill marks!   

Tip: When the weather is less than stellar, I make these in the oven. Place on a cookie sheet and bake for 12 minutes at 350, turning once to brown both sides.

Ingredients
  1. 1/2 pound thinly sliced prosciutto
  2. 2 oz herb goat cheese
  3. 2 oz cream cheese
  4. 1 pound fresh asparagus, trimmed
Instructions
  1. Blanch the asparagus. Drain and quickly place in an ice bath. Remove the asparagus onto paper towels and dry completely.
  2. Combine softened cream cheese and herb goat cheese until smooth. If goat cheese is too firm, place in microwave for 20-30 seconds until softened.
  3. Cut prosciutto slices in half and spread with cheese mixture.
  4. Wrap a prosciutto piece around each asparagus spear. If spears are slender, use 2 spears, thicker use 1 spear.
  5. Lightly spray or oil the grill rack.
  6. Grill, covered, over medium heat for 6-8 minutes or until prosciutto is crisp, turning once.
Notes
