Dublin Iced Coffee – Friday’s 5 o’clock Wet Your Whistle Call!

Happy Birthday Dad! This cocktail from Soda and Swine, right here in San Diego, reminded me of my Dad immediately. He loves his coffee and he is an Irish guy! When David and I took my Mom and Dad to Ireland to visit our “Irish Roots”, we discovered that Guinness makes you handsome! Who knew? But all over town there are signs telling us just that, so it must be true. Now that couldn’t be just a load of Irish Blarney, could it? In fact, I do believe when we left the Guinness Brewery, after a pint or two, we all were just a wee bit more handsome! And that’s no Blarney!

Today I toast my Dad for being an amazing inspiration in my life. And true to his Irish roots, he is handsome, has a quick wit and a gift for telling stories and jokes that has become his trademark. Those who don’t know him well believe the story he is telling but the rest of us, who do know him oh so well, know that the story has been blown out of proportion, taken out of context, and sometimes twisted beyond recognition for the pure pleasure of entertaining us all. When I think of my Dad, it is with great love and a smile on my face because of all the laughter he has brought to my life. Love you Dad!

Most people can claim a couple, maybe at best three or four stories of harrowing adventure from their life, but he may have exceeded a cat’s 9 lives many times over, all told through the filter of his hilarious sense of humor!

Slainte!

Ingredients:

2 ounces strong cold-brewed coffee

2 ounces Stout (Guinness)

1 1/2 ounces Irish Whiskey (Jameson)

3/4 ounce simple syrup

1/2 ounce heavy cream

Sprinkle of cinnamon

Directions:

Mix coffee, stout, Irish whiskey and simple syrup in a highball glass. Add ice to fill.

Gently pour in heavy cream so that it gradually sinks into the coffee. Sprinkle with freshly grated cinnamon.
