Sriracha Asian Slaw

We just got back from a trip up north for my Dad’s birthday and I got to hang out with my nephew Ian. He is the true foodie in our family and whenever we get together the recipes and ideas start to fly. It is our favorite topic of conversation and we “feed” on each others enthusiasm for great food! If there is one ingredient that pops up more than any others, it is Sriracha. We love it! 

Awhile back there was talk about a Sriracha famine of sorts and we considered buying a case, just to be safe…. Ian whipped out his bottle of Sriracha and we got into who’s bottle is bigger than who’s. Guess it should have been who has hardly any left in their bottle and needs to buy some more! 

With Sriracha still on the brain when I got home, I thought I’d experiment with a salad dressing using it. I had some cabbage on hand and knew it would be hardy enough for a heavier dressing. Great news! It was tasty and now I have a dipping sauce for spring rolls too! Can’t beat a two-fer!   

Sriracha Peanut Sauce

Whisk the peanut butter, vegetable oil and sesame oil in a small bowl until smooth. Whisk in the rice vinegar, Sriracha and key lime juice. Add the salt and sugar to taste.

Cabbage Slaw

In a medium bowl, toss the sliced cabbage, grated carrots and cilantro together. Toss with 1/4 cup of dressing and you are ready to serve. You will have extra dressing for another salad, a dipping sauce or double the amount of cabbage mixture to feed a larger crowd.

Ingredients
  1. 1 Tbs creamy peanut butter
  2. 5 Tbs vegetable oil
  3. 1 tsp dark sesame oil
  4. 4 Tbs rice vinegar
  5. 1 1/2 tsp Sriracha hot sauce (more or less depending on your heat preference)
  6. 2 key limes, juiced
  7. 1/2 tsp ground cumin
  8. Salt, pinch
  9. Sugar, pinch
  10. 2 cups cabbage (thinly sliced, Napa, green, purple, or a combination)
  11. 1/2 cup carrots, grated
  12. 1 Tbs chopped cilantro fresh
Instructions
