Pomegranate Daiquiris – Friday’s 5 o’clock Wet Your Whistle Call!

I remember as a kid, riding my bike over to the 7-11 to get a Slurpee. On a hot day it was worth the ride knowing that I would soon be sucking the icy, fruity concoction in through the striped straw, sitting in the shade of our front lawn tree. Makes me happy just thinking back on it. Now that I am all grown up, it doesn’t mean that a Slurpee won’t be that satisfying again, it just means that it has alcohol in it now and I won’t be riding my bike!

Ingredients:

3 1/2 cups pomegranate juicepomegranate
1 1/2 cups light rum
1 cup cassis
1/3 cup fresh lime juice
Ice cubes
Pomegranate seeds and frozen green grapes for garnish

Directions:

Combine pomegranate juice, rum, cassis, and lime juice in a large pitcher. Cover and refrigerate until cold, at least 4 hours or up to 1 week ahead.

In a blender, combine 1 1/2 cups juice mixture and 1 cup ice cubes. Blend until slushy. Pour into large martini or wine glasses. Repeat with remaining juice.

Garnish with pomegranate seeds and frozen green grapes.
