What’s dinner without dessert? Caribbean desserts are greatly inspired by the abundance of tropical fruits in the islands. And the sugarcane! Rum finds it’s way into many desserts. Plantains aren’t just a side dish for the main meal. When a plantain hits it’s peak ripeness, it is sweet and tastes similar to a ripe banana. And like a ripe banana, the skin needs to turn a blackish brown before it gets sweet. Not pretty, but oh so sweet and tasty. Sounds like dessert to me! As we wrap up our tour of the Islands, we leave the Caribbean on a sweet note! Continue reading

Italian Flags – Chicken Sausages on Picks
If you’re looking for a complicated, posh appetizer where you spend hours in the kitchen….this is NOT it! If you want a simple appetizer that delivers a big Wow factor and satisfaction every time, you’re in the right place! When I’m in a rush but need an appetizer I can rely on, Italian Flags always come to mind. Yummy chicken sausages topped with the colors of the Italian Flag. Let’s just say the artichoke is white ‘cuz I wanted a departure from the usual Caprese combo. Although, that would be tasty too! Continue reading
Zippy Ninja Breakfast Shake
No time for breakfast but need to eat! That’s me! And my husband knows it. He is so cute about making sure I get something to eat before I launch myself into the crazy orbit that is my day. He makes great breakfasts on the weekends and for the weekdays it’s some version of his healthy shakes. A big part of the health in this drink is the joy and the laughter that ensues when I watch him in action. My Ninja chef! Continue reading
Pesto Tortellini Skewers
Stick it to me! It’s a party on a stick! For months Amanda and I have been trying to convince our friend Heidi to have a big bash for her 50th birthday. I mean, the Big 5-0 only comes around once, thank goodness, so you have to mark the milestone. Surround yourself with people you love and who love you and of course….lots of food and adult beverages! Continue reading
Omelettes in a Bag
It’s like a magic trick! Friends of mine go camping several times a year and they talk about these omelettes they make in a bag. In a bag? Surely not a paper bag….I know Girl Scouts and Boy Scouts do it, I think even firemen do it, but I have never done it! Until now…..and it was so cool! I know, what stock pot have I been under, right? Continue reading
Pig Candy!
Hey everybody! Who wants Pig Candy? You heard me right! When pigs fly, I’ll eat this, is what I thought when I first heard about pig candy! This is not my usual kind of food but then I got to thinking about the smoky bacon and sausage and the sweetness of the brown sugar. Hmm….my mind was having a wrestling match! Smoky, sweet savoriness vs well let’s be real…..fat! The Pig Candy finally won out but I still needed a reason to make a batch of it. I surely was not going to eat them all! Continue reading
Fool Proof Brown Rice with Pistachios and Chives
Making brown rice used to give me the fits! It was either too watery or sticky and mushy. When I backed off on the amount of water, it was a crusty brown mess at the bottom of the pot! Yikes! Was I destined to buy frozen brown rice to get the perfect rice? I just couldn’t fathom the idea of being hooked on frozen, store bought rice! Then I came across this fool proof way to make brown, even white rice, perfectly every time thanks to Saveur! Continue reading
Steamed Artichokes with Lemon Aioli
Funny how the simplest things can evoke the greatest comments! My husband and I love artichokes any way they can be served. Because we eat steamed artichokes so often, I came up with a quick and easy dipping sauce that’s now our absolute favorite.
It’s so easy I can hardly call it a recipe but I just had to share it ‘cuz I’ve noticed something interesting happens every time I serve it. We’ll all be standing around the artichoke bowl, chatting and the novice taster pauses the conversation to ask what the sauce is. I have to laugh! I spend so little time on this and so much more time on other dishes and this is what they ask about!! Continue reading
Ay, Caramba! Chili Lime Corn!
Key Lime Basil Sorbet
Do you think I planned to make the Lime Basil Sorbet this week when I saw the weather report? You bet I did! 95-100 degree weather begs for this kind of relief. And I am going to use it 2 ways this week to get the full bang for the buck….it’s just a few bucks to make this so it’s really a bang for the bucks in terms of fun! Continue reading
