Arrggh…….it’s income tax time again! I really do hate this time of year! I’d rather have a root canal! The dinning room table and floor are covered with paperwork, all sorted into neat little piles. The calculator is on fire, the spread sheet is starting to fill in, the brain is spinning, I think I’m going to scream!
Time out! Gotta get back to Zen. I made this lovely, refreshing cocktail knowing that my husband and I would be well deserving of this break after the long, grueling hours spent on our tax prep. Being a smart girl, I planned ahead with the cocktail even if I did wait ’til the last minute to do the taxes. Priorities!
Ingredients:
3 large cucumbers
1 tablespoon chopped fresh rosemary, plus 4 sprigs for garnish
1 cup water
3/4 cup vodka
1/2 cup lemon juice
zest of 1 lemon
3 tablespoons agave syrup
Directions:
Cut 12 thin slices of cucumber for garnish.
Peel and chop the rest of the cucumber and transfer to a food processor; add lemon zest and rosemary, and puree.
Pour the puree through a fine-mesh strainer set over a medium bowl or large measuring cup. Press on the solids to extract all the juice.
Add water, vodka, lemon juice, and agave syrup to the cucumber juice; stir until the agave is dissolved.
Divide among 4 ice-filled glasses. Garnish with cucumber slices and rosemary sprigs.
