Vampire’s Bite with Spellbinder Eyeballs
Feeling a little anemic lately? This Vampire Bite is just what the doctor ordered! As you bring the glass to your lips you will be under the spell of the floating eyeball speared across your glass. Just like in the movies when the vampire gazes into your eyes and the eerie music begins to play, pulling you close to the vampire so he can take a bite.
The Spellbinder Eyeball will capture you and have you begging for another drink!
My husband created this tasty treat but he does have a little trick to make it extra special. Instead of regular cranberry juice, he uses Trader Joes 100% Pure Cranberry Juice and simple syrup. The flavor and color is so much more intense! Hope you enjoy this “blood red” cocktail!
Vampire’s Bite
Ingredients:
1 part bourbon whiskey
½ part Citronge Liqueur or Cointreau
1 part Dubonnet
1 part Trader Joe’s 100% Pure Cranberry Juice (use the secret formula)
1 tsp sugar and 1 tsp warm water – simple syrup
Directions:
Pour all ingredients into a martini shake with ice and shake until very cold. Strain into a chilled martini glass and garnish with a Spellbinder Eyeball. This makes one Vampire Bite. If you are making these for a larger group then multiply the amounts and store in a container until you are ready to pour into martini shaker to chill and serve. Don’t store with ice in container because it will dilute the mixture.
Spellbinder Eyeballs
Ingredients:
20 maraschino cherries
20 dark chocolate chips
20 lychee nut fruits (canned and pitted)
Remove the stems from the cherries. Insert a chocolate chip, point side in, into each cherry to make “pupil” of the eye. Stuff the cherry into pitted lychee nut fruit to create the Spellbinder Eyeball. Stab a long cocktail pick or plastic skewer thru the eyeball and lay it across the martini glass.
Smoldering Vampire’s Bite
Another fun twist is to add a chip of dry ice to the martini glass and it becomes a smoldering cocktail. Just make sure the chip is large enough so that it is not easily swallowed. Cool restaurants are serving cocktails with dry ice chips so your guests will think you are so in the know!
