My Irish girlfriend Laura and I always go the the St Patrick’s Day Parade and then to a local pub where a group of die hard Irish men have been playing Irish “sing-along” music for years. We both have Irish ancestry and the singing and drinking satisfies us both down to our little Irish bones!
You never know if it will be raining or a sunny day in San Diego for St Patrick’s Day. We always come prepared for anything, ‘cuz rain or shine we will be wearing the green and celebrating in style. I bring the flask with the Jameson Irish Whiskey and she brings the Irish whiskey jello shots. And we sing our hearts out and toast to being lucky to be Irish!
Ingredients:
1 large box Lime or Orange Jello (the colors of the Irish Flag)
2 cups boiling water
1 1/2 cup cold water
1/2 cup Irish Whiskey
St. Patrick’s Day Jello Shot:
Pour Lime jello into a bowl. Stir boiling water into Jell-O until dissolved.
Stir in cold water add the Irish Whiskey.
Pour into shot glasses or a baking pan. If using a pan, cut into cubes after set to serve.
Chill in refrigerator until set.

If you want to really get in the spirit of the celebration, pick up shamrock shaped candy molds and make your jello shots in these.
