One of the many joys of living in a RV community are the constant opportunities to hang out with friends! Yes, you heard me right! Living in an RV community! As we cruised across country we made a planned 5 day stop in the Star Valley. What wasn’t planed was how much we would love it here, the people we would meet and our desire to stay longer….much, much longer!
RVer’s have an immediate common bond; the love of travel and people! On day 1 we went for a stroll around the RV park. We began to notice that the lots started to take on a completely different look from the ones up front. The back half of the park was full of people who owned their lots and had knocked themselves out landscaping and designing their own brand of paradise! As we rounded the corner, with the back drop of the Bridger-Teton mountains in the distance, we came upon the most gorgeous property. We were awe struck by the beautiful flower beds of irises, oriental poppies and the biggest lupines I had ever seen! And then we heard a welcoming voice from the patio.
It would turn out to be the voice of a new friend, a fellow foodie, a work out and line dancing partner, golf buddy and neighbor. But in that moment it was the voice of a friendly stranger welcoming us to join them on their patio for a glass of wine. And so we did, and so the next big phase of our adventure began. Michelle, the welcoming voice, introduced us to her husband Ron, quite the character from the get go, and their good friends Mike and Karen. We hit it off famously and soon Michelle was offering to take us on a spin around the park in her golf cart. What a tour guide and salesperson she was because in that moment we began to consider buying a lot for ourselves!
We were so taken with the beauty around us, the sense of community, and the non stop fun and activities like golf, pickle ball, line dancing, grilling by the pond, hiking, biking and lots of eating, we decided to stay! Within 3 days of our initial arrival we had picked out the lot, moved onto it and started the purchase process. It was easy! We knew we belonged here.
So for now Star Valley Ranch Resort is our second home while on the road. The travel is not done by any means but this way point in paradise will be on our travel plans every year for years to come! In the meantime, there’s plenty of time for cocktails and food with wonderful friends! Tuna-tini’s, zucchini pancakes with spicy dipping sauce by Michelle and cocktails with Shari and Dean. Spicy, just like our friends! A perfect way to start the evening!
Make the sauce. Add mayonnaise, sriracha, red onion, sesame oil and lime juice to a bowl and whisk together to form a smooth sauce. Add more sriracha if you like more heat. Remember, you don’t want the heat to overpower the other flavors. Place the sauce in a container and refrigerate until ready to assemble.
Cube the ahi tuna. Place the tuna in a container and refrigerate until ready to assemble.
Slice the cucumber length wise and remove the seeds with a teaspoon. The seeds contain lots of water. You are looking for nice crisp pieces of cucumber.
Cut the cucumber halves into strips and then into a small dice. Place cucumber in a container and refrigerate until ready to assemble.
Now it’s time to dice the avocado. Cut the avocado in half and remove the pit. Score the avocado with a knife to form the dice. When you are ready to add the avocado to the tuna-tini, use the tip of a small spoon to scoop out a small portion. You want to wait until you are ready to assemble before you cut the avocado so it doesn’t turn brown.
Time to assemble the Tuna-tini! Begin by spooning a small dollop of spicy sauce into the bottom of a martini glass.
Add some cubed tuna on top with another tiny dollop of sauce.
Next layer is the diced cucumber with a tiny dollop of sauce.
More tuna please! Another layer of tuna and a dollop of sauce! Oh, this is looking good!
The last layer is the diced avocado. Top the avocado with a small dollop of sauce and one cube of ahi tuna and serve.
