One of the things I look forward to at the holidays, or anytime there is a large gathering, is the variety of food. Large groups of people tend to mean Potluck style! You never know if you are going to have a dish you have never heard of, one of those taste treats you only allow yourself on special occasions or a new recipe that could become one of your favorites. That’s the beauty of it!
Every Thanksgiving we have a little of all of this at our holiday gathering. Each year I like to bring something different because I am always experimenting with different recipes and family and friends are the best guinea pigs. They are so understanding and appreciative of your efforts. But there are some people who are asked to bring the same thing every year and they know what a compliment it is to be asked. Erin is our girl in this category. We ask her to bring her “corn dish” and we have come to rely on it as a staple, must-have dish at our holiday table. This is not the canned creamed corn of your childhood where the corn is mushy and tastes like chunky baby food! This is special!
This year I asked Erin for the recipe. I said to my husband, “Why have I never asked Erin for this recipe when we love it so much?” Could it be by the time we sit down to the huge feast, after slaving in the kitchen all day, I settle in to the comfort of the meal, the laughter and stories from the group and just relax my constantly whirling mind and savor the moment? I think this has to be it. But this year I managed to snap back into food/recipe mode, after perfectly stuffing myself, to ask Erin for the “corn dish” recipe.
Erin laughed and said, “There really isn’t a recipe.” “What?” I say. “Then please give me a list of what goes into it so I can recreate it at home.” She smiles and says, “Corn, herbed cream cheese and jalapenos…that’s it!” Sometimes it’s the simplest dish that gives you the greatest pleasure. Jalapeno Creamed Corn
As easy as 1,2,3 ~ Organic Sweet Corn, Chive and Onion Whipped Cream Cheese and finely minced Jalapenos. The combo is perfect!
Sweetness from the corn, creamy richness from the cheese and the random hit of heat from the jalapeno is just the right counterpoint to the mild flavors of chicken or turkey. Make it as spicy as your crowd can handle!
Place all of the ingredients, yes all 3, into a glass bowl and place in the microwave. Heat for 4 -5 minutes until all the cream cheese has melted and the corn is hot. Stir and serve!
- 2 - 16 ounce bags of Organic Sweet Corn
- 6-8 ounces of Chive and Onion Whipped Cream Cheese
- 1 tablespoon Jalapenos, finely minced (more or less to the level of heat you desire)
- Place all of the ingredients, yes all 3, into a glass bowl and place in the microwave.
- Heat for 4 -5 minutes until all the cream cheese has melted and the corn is hot. Stir and serve!
