Dessert Trends for 2011

A Few of My Favorite Things!
Chantilly cream on strawberries, toasted meringue on lemon curd; dark chocolate cream tart layered with a salty bite of caramel, cranberry pear tarts and cupcakes and mousse. These are a few of my favorite things! Desserts are happy foods! It is not “stressed” spelled backwards. Especially, when we are talking about mini desserts. You can satisfy your sweet craving but you don’t have to over indulge.

Grateful for the Challenges

There is a familiar chill in the air. Thanksgiving Day is here! The Thanksgiving season is a great time to appreciate the small, as well as the big fortunes in life. Every year, around this time, I pause to take a look at my life and the people around me. I’m truly thankful for the little things that so often get overlooked.

Give Thanks to the Hostess Gifts!

Thanksgiving is a wonderful time to show your appreciation for the people that have made a difference in your life, especially when you have been invited to share the holiday meal with them. A lot of work goes into the creation of the Thanksgiving meal and what better way to say thank you to the hostess, than a thoughtful gift. Here are a few of my favorite ideas this season.

But once you make homemade biscuits and see how easy and incredibly better they are, you will never go for the canned tube style biscuit again, I promise! This week we learned how to make biscuits and my husband and I ate them for a week and they were still flaky and flavorful as the week went on; not in the least bit dry.

Gone Bananas!

The pastry and baking classes have begun and Chef Foran stresses technique! If you make a recipe once well but cannot consistently repeat that, it means you don’t have good technique. If you don’t have good technique, you’re just a hit and miss cook, and that’s enough to make you bananas for sure! This is what I was hoping for. Technique!

Who Drinks This Stuff?!

The devil is in the details as they say and what better time of year to have devilish details! Once your guests arrive and have taken in all the spooktacular decorations don’t forget that they will wander about so give them little details that will amuse and delight them. One of my favorites is bottles of creepy concoctions that will make you think you have been invited over to the Addams Family for cocktails!
