Green Salad with Creamy Chipotle Lime Dressing
Never eat a boring salad again! There really is no reason to. The key to a great salad is the dressing! Fresh organic veggies are wonderful but if you have a ho-hum dressing or a bottled one with preservatives all you notice is the sad dressing and not the fabulous vegetables. Shake it up a bit and let your creative juices flow when you make your next salad. Try a new vegetable or fruit and give that salad some pizzazz! Express yourself!

What’s for dinner…the other white meat! Pork tenderloin is so versatile and it is much more affordable than beef tenderloin. Guess you could call it the “friendly meat”. Many years ago I thought I didn’t like pork tenderloin and I can’t imagine why. Pork tenderloin is such an agreeable cut of meat. As I reflect back on that decision I can’t for the life of me remember why I had such a crazy notion. What’s not to like? It’s tender, succulent, can be marinated or rubbed with a myriad of seasonings, and it is so fast and easy to make. In fact, it cooks so fast, it’s ideal for a week night dinner. Aren’t tiny things the cutest? Puppies and kittens, babies and, of course, food! There is something about mini sized food and desserts that just beg you to pop them in your mouth. This little piggy is a Super Star! Around our house we have the 80/20 Rule. 80% of the time we eat very healthy, tasty foods consisting of mostly vegetables and chicken or fish with lots of flavor! Not boring little piles of things you are supposed to eat. Oh, but when that 20% of the time rolls around we are very naughty! New Year’s Resolutions? I don’t think I have ever been a person who makes specific New Year’s resolutions. I’m more of a resolutions through out the year kind of person. To keep my brain from overloading, with little wisps of smoke coming from my ears, I do like to make a list of things I want to accomplish in the new year at the beginning of the year. Once it’s on paper, I don’t have to run the continuous list loop in my head. It may sound funny but when you check an item off the list, it feels really good! I mean really good! We call it “getting credits” at our house. In case you were wondering, it is legal to do something you forgot to put on the list, go back, add it to the list and check it off “for credits”! I like the idea of evolving, changing as new thoughts or epiphanies come to me. Being open to change and new paths of thought have always been appealing to me. Today’s new thought….
Christmas in The City
For me, there is something magical about San Francisco! Every since I was a child and our parents would take my two brothers and me into the “The City”, I would feel a wonderful vibration start to flow through my body. When you are from Northern California like I am, you call San Francisco “The City” and everyone knows which city you mean. When you are from anywhere else, you don’t seem to have the same reverence for her as we locals do and call this wonderful lady things like “Frisco” or “San Fran”. We beg of you, please don’t! If San Francisco is too much of a mouthful, she would love to be called “The City”. It was more than excitement that came over me as we drove across the Golden Gate Bridge, it was like the feeling you get when you are going to see a favorite aunt or friend you have not seen for a very long time; someone you love and always feel good around.
