Pig Candy!

Hey everybody! Who wants Pig Candy? You heard me right! When pigs fly, I’ll eat this, is what I thought when I first heard about pig candy! This is not my usual kind of food but then I got to thinking about the smoky bacon and sausage and the sweetness of the brown sugar. Hmm….my mind was having a wrestling match! Time to Relax and Replenish!

My husband likes to tease me by saying I have only 2 speeds….full speed ahead and crash! So for those of you who know me well, this should come as no surprise that I have packed more into the last 3 weeks than is clearly healthy or sane! But was it a blast? You bet! Now it is time to relax and replenish and to me that means a lovely cup of tea and a few hours with Julia Child and Julie Powell, via the movie Julie and Julia.

I take you back 3 weeks ago when David and I were planning and packing up for our 1st RV camping trip with friends. Our biggest goal, and much loved and talked about fantasy, is to travel across this beautiful country of ours in an RV; sharing our adventures with me cooking my way through every state. One of the wonderful attractions here in San Diego is the Roar and Snore Safari at the San Diego Zoo Safari Park. I still refer to this as the Wild Animal Park ‘cuz old habits die hard. Puttanesca Bolognese Sauce

My husband loves Puttanesca Sauce and I am a huge fan of Bolognese Sauce. So like any good marriage, a compromise can end up getting both people what they want. Thus this wonderful sauce was born! Every time I make this sauce I make as much as I can possibly fit into my pot. Some of the sauce is served for dinner that night. The rest is frozen for other fantastic meals when time is running a little short but the mood is clearly Italian! Continue reading

Oven Roasted Turkey Spinach Meatballs

I am not a fan of frozen spinach! I have never found a brand that doesn’t taste funky, kind of like the box or freezer burn. It just tastes gross to me. You can’t hide it in something like you hide vegetables for kids and think I won’t know. I will know it! Fresh is so much nicer and it takes about the same amount of time to prep as thawing frozen spinach. You will be converted! Continue reading

This party girl reached her limit this week! After a long weekend of 4th of July celebrations, followed by our granddaughters 1st birthday party and my husband David’s birthday, I finally bit the dust. I guess it didn’t help that David was sick all week in between these two weekends. Bless his little heart but men just don’t do sick very well. Thank goodness he rallied for the birthday parties and I managed to hang on until his was over. We surely would have hated to miss his birthday dinner at 100 Wines! Fiesta Summer Salad

Summertime, summertime, la la summertime! Oh yeah, this salad is a summertime explosion of flavor! I’m thinking fireworks here…..So fresh and full of flavor, it really is as good as it looks! Healthy and satisfying because all the flavors are balanced. The dressing is so light all you taste is the freshness of the vegetables and a little hint of lime lingering in the background pulling it all together. Bright, crisp and cheerful, all the colors and shapes make me so happy! What’s really fun is how happy it made other people! I took this salad as my offering for the 4th of July party at our friend’s Steve and Carolyn’s house and got a resounding thumbs up from everyone! It tastes so dog gone good it’s officially my new favorite salad! I mean, it really must be because I am making it two days in a row and can hardly wait to eat it again! It’s a party in your mouth!
