Green Chili Cheese Cornbread Poppers

It’s cold! I mean it’s cold for us San Diegans so we need to take advantage of it while it lasts and make up big pots of soups, stews and chili and don’t forget the cornbread! I love a cornbread muffin with a bowl of soup but I really can’t imagine chili without these muffins. What’s extra fun about these little guys is that you can eat a whole handful of these yummy little rounds of flavor and it will still only add up to about two regular sized muffins. Santa’s “Special” Cocoa ~ Friday’s 5 o’clock Wet Your Whistle Call!

“Santa Baby, hurry down the chimney tonight…..” I made this for my Santa to warm him with his favorite flavors. To make sure that you get just what you want from your Santa, ask him what he would like for Christmas in his special cocoa and get creative.
 
This hot cocoa is definitely a grown-up version, but you can make it kid-friendly too by omitting the liquor. For a special touch, I like to toast the marshmallow topping under the broiler or you can use a mini torch if you have one. Kids will think it is S’mores in a cup! The pinch of chili powder adds warmth and depth of flavor but not real heat. It’s the mystery ingredient that will make you cocoa extra special. The recipe can be doubled, tripled or more to please your whole family. The more the merrier!

Comfort in a Bowl!

Comfort food takes on many forms and being an Irish girl, for me, it is usually potatoes! But this time it is lentils!
 
The evenings are getting cool even in San Diego and one of the first soups I think to make is a recipe from Ina Garten. It is simple, flavorful and amazingly low fat considering that is not what Ina is known for.  I don’t drizzle the olive oil on at the end and add more red wine. A personal preference. Serve this with crusty bread like Pain Rustic and a glass of Cabernet Sauvignon and this meal will warm the cockles of any chilly heart.
