Pineapple Cabbage Coleslaw

My Mom made this coleslaw a lot when I was growing up and I loved it. It has the perfect combination of sweet from the pineapple, tart from the Granny Smith apples, crunch from the carrots and cabbage and a creaminess from the dressing.

Well, years later, I married a wonderful man that would eat anything but his adorable son was quite the opposite! Ryan is a very “selective eater” to say the least. I still tease him to this day that the list of things he won’t eat is like the list of things I will eat. Continue reading

Grilled Corn on the Cob with Garlic Butter, Lime and Cotija Cheese

There is so much corn in the grocery store right now that you just have to have it! Nothing is better than corn on the cob at the height of the season! Some people can and only will eat it with a little salt, pepper and butter but I like to dress it up so I am constantly experimenting with new flavor combos.

I had to turn to my favorite grill guy Bobby Flay because I had just run out of ideas. My brain was like a chicken picked cob with no inspiration left. Bobby to the rescue and dinner is shaping up! Continue reading

Every since I was a child I thought food tasted better when you ate it outside. From camping trips to eating a vine ripe tomato with a shaker of salt while watering the garden, it just tasted more real outside.
 
Now the summer season is almost upon us and I am so excited to start grilling everything I can get my hands on. Grilling is not just for meats; veggies and fruit are great on the grill too! Grilling makes everything taste better and the cleanup is a breeze.
